The fruit was sourced from the Pisa Range Estate Vineyard, 12 km north of Cromwell, separated by a lake from our Bendigo Vineyard.

The vineyard is planted (1996) with pinot noir clones 10/5 and clone 5, and in 1998 planted with pinot noir clones 113, 114 & 777. The soil is mainly loam, of very good depth and it is a medium vigour site, with the rows north facing, and a vineyard spacing of 2 x 1.3 metres.

The 2000 Pinot Noir was hand picked on the 12th & 13th April 2000, transported in small 10 kilogram picking bins into the winery, with 85% being de-stemmed and 15% kept as whole bunches.

The grapes were fermented in 2 tonne fermenters with up to 10 days cold maceration. Indigenous yeast fermentation, with fermentation peak at 31-33 deg Celcius followed by post fermentation maceration depending on tannin structure between 5-7 days before being pressed and transferred into all French oak of which are 20% new, 30% 1 year old and 50% 2 year old.

The wine underwent malolactic fermentation in spring and before bottling received an egg white fining for final settling, and bottled on the 17th March 2001.

Bouquet: Delicate fine sweet pinot noir nose, so typical of Central Otago with black "Dawson" cherry supported by thyme, and a touch of earth and mushrooms
Palate: Warm, stylish, finely textured with elegant intensity of fruit and varietal definition, well-integrated oak, finishes on a chocolaty note with soft tannin persistence. Or, in other words, this wine is “dentelle” (pronounced dàtel), which is a French descriptive word for elegance, finesse and preciousness
Aging Potential: 4 to 7 years
