Hand picked on 8th May from the Highgate Vineyard in Gibbston Valley.

Following pressing of the ripe grapes, the Pinot Gris juice underwent a coolish fermentation of 14 days until dryness. The wine was left on its lees for 5 months to gain more complexity and palate weight. It had a trim milk fining.
