This is the seventh release from our Bendigo Estate Vineyard – a 15 hectare north sloping ideal site planted on grafted pinot noir vines of various clones and rootstocks in the heart of Central Otago. The fruit was hand picked in ideal conditions on 20th April 2007. The winemaking was very much in keeping with the traditional practices from the old world.

The Pinot Noir clones (10-5, 5, 115 & 777 – from our 1998 block) were co-fermented, with 20% whole bunches, 6 days cold maceration. Indigenous yeast fermentation peaked at 30–33 oC. Post fermentation maceration over 6 – 9 days, depending on tannin structure, before being pressed (total duration 31 days) and transferred into all French oak, of which 16% new, and 84% 1 year old.

The wine underwent malolactic fermentation in spring before being bottled un-fined and unfiltered on 23rd July 2008.
